INGREDIENTS

5 kg raw mangoes-cut into pieces of desired size, with stones removed
3 cups salt
1 ½ cup fenugreek seeds-coarsely ground
1 ¼ cup red chillies-coarsely ground
1 ¼ cup onion seeds
2 cup fennel seeds-coarsely ground
1 ¼ cup turmeric
a sterilized jar

METHOD

Mix the salt into the mangoes and keep overnight in a steel or a glass bowl.

The following day, squeeze liquid out of the mangoes and set aside till ready to use. Spread the mangoes out in the sun to dry; approx. for 2-3 days.

Mix the rest of the ingredients into liquid set aside and then into the dried mangoes. Transfer into a sterilised jar and sun for 5-6 days.
